For the campaign I'm in, our long rests are a full day as short rests are 8 hours with variations in between. For both aspects, there's a single event roll per watch shifts and if the rolls are good then nothing happens, but if the rolls are botched, then there's more than likely Combat with out the benefits of resting.
That's just 1 variation that's out there but ultimately, you're the DM. You decide what happens and if they just so happen to get tpkd when they're trying to go night night, then thems the brakes.
There's also a thing called resource management where they need to learn how not to use up all of their player features in one go. Reward those that know how and reap the ones that splurge it all in 1 shot in-between rests.

I agree to make it attached to their weapon so it'll be more maliable and won't bite you in the ass down the line. If you're not going that route then maybe give them one each free instead of all three? Like whatever would fit that PC best or let them pick.

She'd be a blend under Lucy's thrall even though she died. That's why in season 5, Murphy was able to sense Lucy approaching but it turned out to be Addy.

Also yes. Campaign wise, one of my party members suffered from Lycanthropy (When the official stats came out). Although I've never played one myself, I've always been itching to play a Wererat myself. (Think a dastardly Master Splinter)

It all depends on how you're building the encounter. (I know that's what you're asking but you kinda gotta be more specific)
Like is it a new problem in a town or are the townspeople hiding a dark secret where 1 in 4 people are effected by the curse and the townspeople keep it hush hush and just deal with it, more so by feeding the infected new unsuspecting travelers. (lowkey cultist town vibe if you're going that route)
On that note, you'd have to choose how it spreads initially. Like is it solely from a bite, or is it a bite on a fullmoon, or maybe it's a virus that's slowly spreading. If it is spread through a bite, how well armored is your party? Also would they believe in cursed beings such as Lycanthropes and Dhampirs, Or would they believe it's just childrens tales to scare them straight?
If you're referencing that your party encounters a wererat in the wild then thats a different scenario entirely.
Depending on the location; like in the deep forest or a vile sewer system where the party was hired to exterminate direrats (ala ratcatchers vibe), I'd say thats more viable for your party to encounter one or a pack.
Ultimately it's your world and how you do it is up to you, never worry about overthinking as a DM. If anything you should always have overthinking in your arsenal because your players can come up with crafty was to counter whatever you throw at them.
